Ingredients: (makes 4 servings)
- 1 cup simple syrup
- 1 cup lemon juice (about 6 lemons squeezed)
- 1 small bottle Pellegrino
- 2 cups cold water
- 2 drops of lavender essential oil OR 1 tbsp dried lavender
- dried lavender sprigs for decoration
Make simple syrup by combining 1 cup sugar and 1 cup water, bring to boil until sugar melts. (If you use dried lavender, add that to mix before boiling). Then, use a strainer to strain lavender from simple syrup.
Combine lemon juice, simple syrup, Pellegrino, and 2 cups cold water to a pitcher or bottle. If you are using essential oil, add ONLY 2 drops to the mix. Lavender essential oil is quite strong, only a couple drops are needed!
Cool in refrigerator for several hours. Serve with lemons and dried lavender springs if desired. Lavender lemonade makes a nice palate refresher or after dinner drink. Enjoy!
