I enjoy making salads, but one of my complaints is all the chopping involved in preparation. With this sweet and tangy shrimp salad, just sprinkle the ingredients; in a couple minutes you have a colorful and healthy salad, with no chopping needed. And, I picked up all the necessities at Trader’s Joe’s market, even better with one stop shopping.
You will need (for one salad):
- spring mix lettuce
- 1/4 cup dried cranberries
- 1/4 cup mango salsa (I use Trader Joe’s pineapple mango salsa)
- 1 tablespoon goat cheese
- 1 tablespoon sunflower seeds
- the dressing is a mix of soy ginger vinaigrette and sweet chili sauce (see below)
- 5 or 6 grilled shrimp
First grill the shrimp, don’t forget to coat your skewers with olive oil to avoid the shrimp sticking.
Next, plate the lettuce. Then, sprinkle the cranberries, mango salsa, goat cheese and sunflower seeds.
Add the grilled shrimp.
For the dressing I use 2:1 ratio of soy ginger vinaigrette and sweet chili sauce. For example, 2 tablespoons of soy ginger to mix with 1 tablespoon of sweet chili sauce. This dressing adds a little tang to the salad, and you only need a drizzle!
