Light and refreshing, watermelon agua fresca (fresh water) is a delicious thirst quencher on a warm summer day. Popularized in Mexico, agua fresca is simply fruit blended with a bit of sugar and lime juice (I added mint for a little extra kick).
Ingredients are (serves 4) :
- 4 cups of chopped seedless watermelon
- 1/2 cup water
- 20 mint leaves chopped
- 6 tablespoons white sugar
- two limes (cut in half) and some thin slices for garnish
- ice cubes
Boil water and sugar til melted, let cool. Once cooled, add chopped watermelon and sugar water to blender; puree until smooth.
Muddle juice from 1/2 a lime, and 5 mint leaves per glass. Add ice, and pour the watermelon agua fresca. Garnish with lime slice, stir and enjoy!
