Yogurt Fruit Tart

I recently discovered this fruit tart recipe when asked to make dessert for a neighborhood party.    The crust is made from cashews and dates, just add some greek yogurt and decorate with fresh fruit.

You will need:

  • 1 1/2 cup unsalted cashews
  • 17 Medjool dates
  • vanilla greek yogurt
  • fruit of your choice ( I used kiwi, clementines, strawberries, blackberries, & blueberries)

Soak the dates in warm water for 15 minutes to soften.   Then, remove seeds and blend with cashews for crust.

Use non-stick spray on pan to prevent crust from sticking.  Press crust on to pan (I used a touch of water on my hands- as the crust will be sticky). Cool for 1 hour in refrigerator.  Spread vanilla greek yogurt on crust.

To finish, decorate with fruit.   As pretty as a it is tasty, this yogurt fruit tart will be a conversation starter at any event!
