Packed with protein and fiber, these power pops are a healthy on the run snack for kids and adults.
You will need (makes about 30):
- 2 cups raw unsalted cashews
- 2 cups Medjool dates
- 1 cup shredded coconut
- 1 teaspoon vanilla
First, soften dates in warm water for about 10 minutes. Using a food processor, chop cashews. After dates are soft, remove pits and break up in to smaller pieces (makes it easier to mix). Then combine both cashews, dates, and vanilla together in food processor.
A sticky dough will form once mixed. Roll into balls and place on parchment paper.
Toast coconut in pan over medium high heat, steady stirring as not to burn.
When cooled, roll balls into coconut.
Freeze for one hour before serving. These snacks can be kept in the refrigerator for up to a week. I prefer them frozen; makes a tasty snack before the gym or before kids’ practices.
