Vegetable Farro Salad

Farro is a whole grain similar to barley, with a nutty flavory and chewy consistency.  Commonly grown in Italy, Farro is used in soups and salads since it is a healthy, filling food.  Grill some veggies and add Farro for a colorful crowd pleasing main or side dish.

You will need:

  • farro
  • 3 carrots
  • 1 yellow pepper
  • 1 zucchini
  • large handful of spinach

Coarsely chop the veggies and grill.   Cook Farro according to directions, I boiled mine for about 15 minutes and strain.


The dressing is:

  • 1 tablespoon of spicy brown mustard,
  • 1 tablespoon of white wine vinaigrette
  • 1 teaspoon of olive oil

Add Farro, grilled vegetables, and drizzle dressing (to taste) over warm sauté pan and stir.  Cook over low heat for 3-5 minutes, then add spinach, gently fold several times, and enjoy!
